This week, in the context of their tourism module taught by Marie-Fleur Fourquet, first year students on the master’s degree programme were lucky enough to discover one of the most prestigious establishments in the Bordeaux region.
Belonging to the Relais & Châteaux chain and located in a beautiful natural setting surrounded by vines on a hill in Bouliac, a suburb of Bordeaux, the Saint-James offers outstanding accommodation and meals. The existing restaurant was totally transformed in 1989 by Jean Nouvel. It is now an atypical building with architecture inspired by ancient tobacco curing barns. The Saint James offers inventive, creative, gastronomic cuisine as well as one of the most beautiful views of the city of Bordeaux.
Welcomed by Managing Director Anthony Torkington and Restaurant Manager Henry Loison, the students visited the establishment and briefly met the brilliant chef Nicolas Magie to learn about satisfying a demanding international clientele.
